Aim: The propose of this project will be to increase the environmental and socioeconomic sustainability of the winemaking industry, focusing on the circular economy possibilities of the wine lees by-product. At a first level, the project will explore the biodiversity of the metabolomic and peptidomic profile of the major yeast strains with oenological interest by applying state-of-the-art metabolomics technologies. At a second level, the project will be directed on the optimization of wine lees artificial autolysis and protein hydrolysis, with the aim to deliver products of high added value. At a third level, the phytoprotective properties of the prepared products will be evaluated.
